Cucumber Raita is a variation of raita that can be used as a dip or a salad. It is often served as a side accompaniment with the main course in Indian cuisine It is made by mixing together freshly chopped cucumber, green chillies, and dahi (yogurt), and optionally finely chopped tomato and onion.
It is especially popular in the summer months as it helps to beat the heat.
Wild Green Hot Table Sauce interpretation:
1/2 plain yogurt (dahi or substitute with plain yogurt)
1/2 cup chopped seeded English hothouse cucumber
1 tbsp chopped fresh cilantro
1 tbsp chopped fresh mint
1 tbsp Wild Green Hot Table Sauce
1 tsp Dry roast of cumin seeds
Kosher salt to taste
Mix in a bowl
Sprinkle 1 tsp Dry roast of cumin seeds of the top, mix before serving
Store in fridge until ready to serve.
Raiti is an Indian condiment made from salted yoghurt (dahi), mixed together with a variety of vegetables, fruits and herbs, and typically served as a side dish to help cool the heat of spicy Indian, Pakistani and Bangladeshi foods.
